Cosa sono i crauti?
I crauti (pronunciati come / ˈsaʊɚˌkɹaʊt /) sono un alimento fermentato. È una delle forme più comuni e più antiche di cavoli conservati (come il kimchi). I crauti contengono una grande quantità di acido lattico, vitamine A, B, C e K e minerali e hanno poche calorie (circa 80 kJ / 100 g).

I batteri residenti nel vegetale e l'aria intrappolata sono principalmente batteri dell'acido lattico (LAB). Questi LAB si scompongono e utilizzano gli zuccheri presenti nel cavolo per crescere al suo interno. Il sale preleva tutta l'acqua in eccesso dalle foglie.
